About This Course
This course aims to provide learners with the basic knowledge on preparing handmade pasta dough with varieties of string pasta and stuffed pasta, incorporated with simple sous vide technique.
Learners will be able to gain knowledge on quality control and the skill of making customised pasta using a variety of ingredients.

Learners should be able to :
1. Identify the classification of pasta and their characteristics.
2. Explain the guidelines for checking quality of prepared pasta.
3. Explain the guidelines for checking quality of stuffed pasta.
4. Identify the various types of pasta dough and the ingredients used.
5. Make and prepare a pasta dough.
6. Make string pasta and stuffed pasta from the dough.
7. Prepare and cook pasta sauce.
8. Cook and serve farinaceous dishes according to standard recipes.
