About This Course
At the end of the programme, learners will be able to:
• Demonstrate an extremely good understanding of food hygiene and safety policies.
• Apply and practice food hygiene audit knowledge at the workplace
• Produce artisanal breads and sculptures in accordance to industry standards
• Demonstrate a good understanding of nutritional and dietary requirements and substitutes for healthy baking
• Apply the correct skills and technique in dough lamination (Puff pastry)
• Produce a wide selection of puff pastry products
• Demonstrate a good understanding of the specific tools and equipment, ingredients and techniques involved in the preparation of advanced confectionaries and pastries
• Produce a variety of hot and cold desserts with the application of advanced baking techniques
• Demonstrate a good understanding of the standard service operations and flow
